Creamy Chicken Hotpot

This is such a delicious warming wintery dinner in my opinion. I made it today and it was nearly all eaten, only a little bit left. 400g potatoes (i used sweet potato) 400g chicken diced 250g mushrooms sliced (i cut these really small so the master fairy wouldnt know they were in it) 150g frozen peas 400g reduced fat chicken soup (or any chicken soup you want) seasoning put the oven on at 190 degrees (170 if fan assisted) 1.cook the potatoes till they are tender and slice (we prefer mash so i mashed ours) 2. brown the chicken - set to the side 3. saute the mushrooms 4. combine the chicken, mushrooms and peas in a large deep pie dish ( i used a casserole dish) 5. add the soup and cover with the potatoes ( I also added a tiny bit of grated cheese on top of ours 6. pace in the oven and bake for 45 minutes or until crisp and brown. enjoy xx the points for this meal is 8 points per serving x

Double Chocolate Waffles - non dairy and no added sugar

This was a recipe for basic waffles that I tweaked to take out the sugar and the dairy. What do you need? 1/3 cup non dairy margarine (I use Pure soya) 1/4 cup of a sugar alternative ( I use Tesco low granulated sweetner) 1 tsp cocoa powder 2 eggs 1 cup of flour (at the minute I'm using normal plain flour but I will be using almond flour in future) 200mls (approx)  of coconut milk dark chocolate chips - you choose the amount here Here are some of the ingredients i use                                I like this spread in food  (not on toast as you cant beat real butter so its a good thing I don't eat bread or butter)  This is my favourite Coconut Milk - its creamy and has a great taste  I definitely prefer this one to the red one, the aspartame based sweeteners are ones I steer clear of How do you make these scrummy waffles? mix up the egg...

Avocado and Walnut Salad

What do you need? 80g Rocket Leaves 1/2 Red Onion finely chopped 3tbsp Olive Oil 2 tbsp lemon juice  1tsp whole grain mustard (mixed for the dressing) Giant handful of walnuts, chopped and baked in oven for 5 mins. Handful of white grapes and another of red grapes, halved 1 avocado A few chunks of lighter Greek cheese. What do you have to do? Mix together and add the dressing .... it's so good you can also do some variations. Use extra virgin olive oil and no cheese for fewer calories! you could add an apple or dried cranberries too for different flavours and textures  the end result ? this beauty

Nacho Style Feast

Serves 2 Ingredients - 250g 5% beef mince 2 baking potatoes cut into wedges frylight 1 sliced onion 1 red pepper deseeded 1 tin tomatoes 1 tsp cumin 1 tsp paprika 2 roughly chopped fresh tomatoes 1 150g tube primula light jalapenos Method put your wedges on a baking tray, spray with frylight and season with salt and pepper Bake until golden then turn, spray again and cook until golden again Meanwhile - add your mince and onion to a pan and fry until cooked through.  Add the ppers and cook for 2-3 minutes then add your tinned tomatoes sprinkle in the cumin, paprika and a few grinds of black pepper.  Cook for 10-15 minutes until most of the liquid is gone.  stir in the fresh tomatoes and switch off the heat. Now switch on the grill and put the cooked wedges into a heatproof dish, spoon over the mince mixture and squeeze over the tube of primula light, sprinkle with chillies and grill until the cheese starts to turn bro...
