Sweet Potato Shepherds Pie

This recipe is amazing, I can't remember where I found this recipe but I made some changes to it. I use the american measuring cups (seriously they are amazing) Sweet Potato Shepherds Pie ingredients - 2 lbs frozen sweet potato cubes 1 tsp butter 1/4 cup of parmesan or any other cheese ( i used non dairy) 1/2 tsp of black pepper 1 lb of beef or lamb mince 1 tbsp extra virgin olive oil 1 cup of frozen onions 1 cup of frozen peas and carrots 1 cup frozen sweetcorn 2 cups of mushrooms chopped 3 cloves of garlic or 1 tsp of garlic powder 1 cup of beef stock 1 1/2 cups of chopped tomatoes 1 tsp of dried basil 2 tsp worcester sauce 1 tbsp tomato puree ... plus extra cheese for top of pie preheat the oven to 180 degrees celsius Cook the sweet potato in a pot of hot water until tender, drain and mash with the butter and the 1/4 cup of cheese. in a separate pan cook the meat over a medium heat, once cooked through take the meat out of the pan, a...

Double Chocolate Waffles - non dairy and no added sugar

This was a recipe for basic waffles that I tweaked to take out the sugar and the dairy. What do you need? 1/3 cup non dairy margarine (I use Pure soya) 1/4 cup of a sugar alternative ( I use Tesco low granulated sweetner) 1 tsp cocoa powder 2 eggs 1 cup of flour (at the minute I'm using normal plain flour but I will be using almond flour in future) 200mls (approx)  of coconut milk dark chocolate chips - you choose the amount here Here are some of the ingredients i use                                I like this spread in food  (not on toast as you cant beat real butter so its a good thing I don't eat bread or butter)  This is my favourite Coconut Milk - its creamy and has a great taste  I definitely prefer this one to the red one, the aspartame based sweeteners are ones I steer clear of How do you make these scrummy waffles? mix up the egg...
